"Standard" vs. "Secure" FTP
FTP is an acronym for File Transfer Protocol. FTP is used to copy files from one computer to another. That is all that it lets you do. Secure FTP, or SFTP, is essentially the same thing but all communication between you and the remote host (e.g. a web server) is encrypted. This means, among other things, that your username and password are transmitted securely when you log onto a server.
SFTP can be used on multiple computer platforms (Mac, Windows, etc.), and examples of recommended software include WinSCP (for Windows only), Fetch (for Mac), Cyberduck (Mac and PC), and Dreamweaver (Mac and PC, for managing static website content).
